Ingredients:
Lebanese bread
choice of diced ham, bacon, salami, chicken, etc
choice of chopped spinach, capsicum, onions, carrots, potatoes, tomatoes, fetta, etc
1 cup of shredded cheese
3 tablespoon of tomato/bbq sauce
pinch of salt/pepper and any herbs you like
Method:
- Preheat oven to 170 degrees
- place lebanese bread on a tray
- spread sauce over the bread
- evenly place your choice of toppings on the bread
- sprinkle salt/pepper and the herbs
- add shredded cheese evenly
- Bake in oven (150o) for approx. 10 mins or until pale golden.
- (Try not to overcook them!)
- Remove from oven.
- Serve while still warm.

Coconut Macaroons
Ingredients
2 cups of desiccated coconut
1 cup of castor sugar
2 tablespoons of cornflour
Pinch of salt
2 eggs
Method
- Mix all the dry ingredients into a mixing bowl.
- Beat the eggs well and add to the dry ingredients.
- You can add anything you like .... Almond,
- Vanilla essences, chocolate chip, sultanas, nuts, cherries
- Mix together well. (If a little dry, add a little bit of water)
- Grease biscuit tray or cover with baking paper.
- Place teaspoonfuls on to the tray, leave room for the macaroons to spread.
- Place a cherry, Almond, nut, chocolate ...... on top.
- Bake in slow oven - 150°c (300°F) for 15-20 min or until golden brown on the tips.
- Cool on racks.
- Can store in an airtight container for up to 2 weeks or freeze for longer storage.

One big onion finally chopped
Half bunch parsley finally chopped
Two big tomatoes finally chopped
One teaspoon salt
Half teaspoon black and red peppers as required
Half teaspoon mixed spices
Two tablespoons tomato paste
Two tablespoons yoghurt
Fresh Lebanese bread
Method:
Preheat the oven to 200 degrees before baking
Mix the entire ingredients well
Spread the ingredients on the bread
One big onion finally chopped
Half bunch parsley finally chopped
Two big tomatoes finally chopped
One teaspoon salt
Half teaspoon black and red peppers as required
Half teaspoon mixed spices
Two tablespoons tomato paste
Two tablespoons yoghurt
